Here is a photo of a section of an original roof on a 2003 built home I inspected today. Notice the dip of the roof sheathing between the trusses. In the attic, most of the sheathing in that section was blocked by duct work, but from what little I could see, I did not detect the cause of the dip. Would it be correct to defer to a licensed roofing specialist?

I probably would not refer this based on your observations. I don't see anything in the photo to raise my suspicions. Around here that's usually referred to as the "KB Wave" resulting from the use of the minimum acceptable framing and decking materials.

I'd wonder whether leaking ductwork had caused condensation which had caused decay. Check for excessive deflection in this area.
