Default Dishwasher connection

Why would you make a dishwasher connection like this?

Because the dishwasher is too far away from the sink? I've seen silly stuff like this before...

Trap needs to be straightened out is all.
It does eliminate chance of cross contamination.

The dishwasher hose should be 5/8" ID it looks kinda narrow in the picture.

Looks like what I commonly see, but that stuff turns brittle after a while.

Do you have to have an iron nipple through the manufactured hole in a heater cabinet or can the CSST flex line run direct through the hole to the gas valve?

Maybe cuz a disposal is not in the area and someone (harry the homeowner) read the directions wrong?
