Tom Yeager has had a little positive feedback
Default Flex WATER lines to H2O heaters

Are there any issues with using flex lines in this manner? (see picture)

Looks good to me, provided that piping is rated for Hot and cold.

They may be rated for hot and cold water, but are you sure that they are allowed to be that close to the vent?
