With water testing you can expect to test for Bacteria (e-coli, coliform), Lead, and Nitrate-Nitrites.

With septic sytems there are different tests, ranging from simple dye tests, to septic load tests which are more complicated

Here in Texas, Selman Home Inspection inspects septic systems using the "load test" method, inspection of the tanks (if accessible), using a "sludge judge" to determine if a tank needs to be pumped out, and a visible inspection of the drain field.
